With a soil first farming method and the utilization of organics, biodynamics and cymatics, this unique terroir shines through with many compliments. To the eyes, the deep, inky, purple opal, to the nose, a classic perfume of juicy, black currant, at entry, a sweet black cherry, while green fig, soft tannin and spice box fills the mid palate. The finish is filled with fennel, purple flowers and soil, intertwined with softer tannins and chocolate powder. Full bodied with amazing concentration, formidable tannins and exceptional structure.
The 2013 will require patience. Anticipated maturity 2018- 2030.
Pair with kale, scallops, octopus, soft shell crab, baked salmon, rotisserie quail, venison over fire, elk or just about any part of a grass fed steer.
